Svo ulje pohranjujem u specijalizirane bačve za ulje pod plinom argonom, jer on bolje od dušika istisne kisik u nadprostoru.
Ulje se najbolje čuva na temperaturi 16 stupnjeva Celzijusa i može oscilirati plus ili minus 2 stupnja do 14 i 18 stupnjeva Celzijusa. Velike oscilacije temperature maslinovih ulja kod čuvanja nisu dobre, jer potiču oksidacijske aktivnosti.
Treba znati da količina kisika koja će se otopiti u ulju ovisi o temperaturi, kao i o veličini dodirne površine ulja s zrakom te o parcijalnom tlaku kisika u natprostoru ulja. Topljivost plinova u tekućinama, pa tako i kisika u ulju, veća je kod nižih temperatura, a pri određivanju temperature čuvanja treba izbjeći skrućivanje ulja.
Ova pojava započinje približno kod 10 stupnjeva Celzijusa kada dolazi do kristalizacije onih triacilgricerola u maslinovom ulju koji sadrže pretežno zasičćne masne kiseline. Ovakva selektivna kristalizacija vidi se u nastanku bjeličastih grudica promjera nekoliko milimetara.
Kod neizbistrenih ulja kristalizacija se odvija brže, budući da krute čestice u suspenziji preuzimaju ulogu centara kristalizacije. Ovom pojavom (osim što se u slučaju skrućivanja zaustavlja prirodno taloženje čestica) takovo ulje u krutom stanju postaje porozno, što olakšava prodiranje kisika.
Često se na pijacama zimi trgovci hvale da je skrućivanje maslinovog ulja dokaz da je to ono „pravo“. Da, vjerojatno, ali to je i dokaz da takvo ulje treba brzo potrošiti.
Naime, nije dobro da maslinovo ulje mijenja agregatna stanja, jer se u njima brzo kvari. Mnogima se u konobi zimi zamrzne i mnogi će reći da „nitko nije umra“ koristeći takva ulja koja su se poslije, dolaskom toplog vremena otkrutila.
To je možda točno, jer nije moguće izmjeriti štetu u organizmu, što ne znači da je nema. Zato se i trudimo svi skupa da maslinovo ulje bude hrana i lijek.

Svo ulje pohranjujem u specijalizirane bačve za ulje pod plinom argonom, jer on bolje od dušika istisne kisik u nadprostoru.
Ulje se najbolje čuva na temperaturi 16 stupnjeva Celzijusa i može oscilirati plus ili minus 2 stupnja do 14 i 18 stupnjeva Celzijusa. Velike oscilacije temperature maslinovih ulja kod čuvanja nisu dobre, jer potiču oksidacijske aktivnosti.
Treba znati da količina kisika koja će se otopiti u ulju ovisi o temperaturi, kao i o veličini dodirne površine ulja s zrakom te o parcijalnom tlaku kisika u natprostoru ulja. Topljivost plinova u tekućinama, pa tako i kisika u ulju, veća je kod nižih temperatura, a pri određivanju temperature čuvanja treba izbjeći skrućivanje ulja.
Ova pojava započinje približno kod 10 stupnjeva Celzijusa kada dolazi do kristalizacije onih triacilgricerola u maslinovom ulju koji sadrže pretežno zasičćne masne kiseline. Ovakva selektivna kristalizacija vidi se u nastanku bjeličastih grudica promjera nekoliko milimetara.
Kod neizbistrenih ulja kristalizacija se odvija brže, budući da krute čestice u suspenziji preuzimaju ulogu centara kristalizacije. Ovom pojavom (osim što se u slučaju skrućivanja zaustavlja prirodno taloženje čestica) takovo ulje u krutom stanju postaje porozno, što olakšava prodiranje kisika.
Često se na pijacama zimi trgovci hvale da je skrućivanje maslinovog ulja dokaz da je to ono „pravo“. Da, vjerojatno, ali to je i dokaz da takvo ulje treba brzo potrošiti.
Naime, nije dobro da maslinovo ulje mijenja agregatna stanja, jer se u njima brzo kvari. Mnogima se u konobi zimi zamrzne i mnogi će reći da „nitko nije umra“ koristeći takva ulja koja su se poslije, dolaskom toplog vremena otkrutila.
To je možda točno, jer nije moguće izmjeriti štetu u organizmu, što ne znači da je nema. Zato se i trudimo svi skupa da maslinovo ulje bude hrana i lijek.
